The Professional Wine Cellar: Sommelier Expertise for Cold Storage
Wine is not just any drink. Whether it's a classified Grand Cru that needs to age for years or a country wine to be served chilled at the table, temperature is key. Our Combisteel range meets both fundamental requirements for restaurateurs.
Guide: Single Zone or Dual Zone?
To choose the right wine cellar, first define your Mayn objective:
| Your Objective | Cellar Type | Operation & Setting |
|---|---|---|
| Storage & Aging | Single Zone (Single Temperature) | Maintains a unique and stable temperature (around 12°C), faithfully replicating the ambiance of a natural underground cellar. |
| Service in Dining Area | Dual Zone (Multi-Temperature) | Two independent compartments for ready-to-drink bottles: one cool for whites/rosés (6-8°C) and one tempered for reds (16-18°C). |
Technology at the Service of Wine
All our cellars are equipped with the essential professional standards to preserve your precious bottles:
- Anti-Vibration System: Compressors mounted on silent blocks and wooden shelves to allow the wine to rest without any mechanical disturbance.
- Regulated Humidity: Maintaining optimal humidity levels to prevent corks from drying out and allowing air to oxidize the wine.
The invisible enemy: "Light taste"
Natural light (and some neon lights) rapidly degrades wine aromas. This is why all our glass-fronted cellars are equipped with Anti-UV Doors. The treated glass filters ultraviolet rays, allowing you to safely display your finest labels directly in the dining area or at the counter.
